holiday cookie project: lemon bars.

The Holiday Cookie Project is moving back into bar cookie territory during this fabulous fourth week of Vegan MoFo with Lemon Bars.

Lemon Bars

Lemon Bars

These lemon bars are a-m-a-z-i-n-g.

Beautifully tangy and sweet, the smooth, tart lemon layer makes a gorgeous contrast against the crisp, buttery, shortbread base – speaking of which, that base is good enough to be a cookie on its own. And the lemon layer? Can we just take a moment to appreciate the awesome powers of agar agar? Who needs gelatine, seriously. Perfection. Did I mention the taste? Let’s just say, when I take a bite, I’m thrust into lemon meringue fantasy land. And those of you who read my blog regularly know how I feel about powdered sugar and the pretty factor. So pretty.

I seriously need to make this into a pie.

These are my husband’s favourite of all project contenders thus far.

My mum even loved these – and she doesn’t even like lemon.

The recipe for these fine bar cookies live in the pages of Vegan Cookies Invade Your Cookie Jar, by Isa Chandra Moskowitz and Terry Hope Romero.

  1. These are my favorite. I don’t remember ever liking lemon bars. Then I had these. Now I can’t get enough. Loooooove.

  2. I really need to find a wife and have three kids. I make all of this stuff and have no one to eat it all.
