These lemon bars are a-m-a-z-i-n-g.
Beautifully tangy and sweet, the smooth, tart lemon layer makes a gorgeous contrast against the crisp, buttery, shortbread base – speaking of which, that base is good enough to be a cookie on its own. And the lemon layer? Can we just take a moment to appreciate the awesome powers of agar agar? Who needs gelatine, seriously. Perfection. Did I mention the taste? Let’s just say, when I take a bite, I’m thrust into lemon meringue fantasy land. And those of you who read my blog regularly know how I feel about powdered sugar and the pretty factor. So pretty.
I seriously need to make this into a pie.
